Potluck-Perfect Baked Beans

Ingredients:

  • 4 cans 15 oz each canned navy beans, drained and rinsed
  • 1 cup ketchup
  • 1/2 cup molasses
  • 1/4 cup Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup cooked and crumbled bacon optional

Instructions:

Preheat the oven to 350F 175C

In a large mixing bowl, combine the drained navy beans, ketchup, molasses, Dijon mustard, apple cider vinegar, brown sugar, chopped onion, minced garlic, black pepper, smoked paprika, and cayenne pepper

Mix well

Transfer the bean mixture to a baking dish and spread it evenly

If using bacon, sprinkle the cooked and crumbled bacon over the top of the beans

Bake in the preheated oven for 45-50 minutes or until the beans are bubbly and the top is caramelized

Remove from the oven and let it cool for a few minutes before serving

Lemon Pomegranate Cupcakes



These Lemon Pomegranate Cupcakes are a delightful combination of zesty lemon flavor and the sweet, juicy burst of pomegranate seeds. They make for a perfect treat any time of the year!

Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • Zest of 2 lemons
  • 1/4 cup fresh lemon juice
  • 1/2 cup buttermilk

Instructions:

In a mixing bowl, whisk together the flour, baking powder, and salt

Set aside

In another bowl, cream together the softened butter and sugar until light and fluffy

Gradually mix in the dry ingredients and buttermilk in alternating additions, starting and ending with the dry ingredients

Gently fold in the pomegranate arils

Bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Allow the cupcakes to cool in the pan for a few minutes, then transfer them to a wire rack to cool completely

Low Carb Peanut Butter Burger with Bacon



A tasty and low-carb take on a regular burger, with peanut butter and bacon working well together. Great for people who want to cut back on carbs without giving up taste!

Ingredients:

  • 1 lb ground beef
  • 4 slices of bacon
  • 4 tbsp peanut butter
  • 4 lettuce leaves
  • 4 slices of cheese optional
  • Salt and pepper to taste

Instructions:

Warm up a pan or grill on the stove over medium-high heat

Add salt and pepper to the ground beef, then divide it into 4 equal parts and form each one into a burger patty

Cook the bacon until it's crispy on a grill or in a pan

Take it out and set it aside

For medium-rare, grill the burger patties for three to four minutes on each side

You can change the cooking time to suit your tastes

Put a slice of cheese on top of each patty in the last minute of cooking so it melts

Get the lettuce leaves ready to use instead of buns while the burgers are cooking

Wash and dry them

Spread one tablespoon of peanut butter on each lettuce leaf

Then, put a burger patty with or without cheese on top of each leaf and top with a bacon slice

Ghee and Clarified Butter



Ghee, also known as clarified butter, is a staple in Indian cuisine and is gaining popularity worldwide for its rich flavor and high smoke point. It's easy to make at home and can be used in a variety of cooking methods, from sautéing to baking.

Ingredients:

  • 2 cups unsalted butter

Instructions:

Transfer the unsalted butter into a saucepan with a thick bottom

Melt the butter completely over a low to medium heat source

After it melts, give it a gentle simmer

There will be foam on top as it cooks

Using a spoon, skim off the foam and discard

Simmer until the liquid turns clear and the milk solids at the bottom of the pan turn golden brown

This could take a quarter to an hour

Take it off the heat and allow it to cool a little

To get rid of any leftover milk solids, strain the mixture into a dry, clean container using cheesecloth or a fine-mesh sieve

Throw away the solids

Before putting the clarified butter in an airtight container, let it cool completely

As it cools, it will become solid

For up to several months, store in a cool, dark place

Ingredients:

  • 2 cups semi-sweet chocolate chips
  • 1 cup unsalted butter
  • 1 and 1/2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup cocoa powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1 cup chopped nuts walnuts or hazelnuts
  • Extra chocolate shavings for garnish

Instructions:

Preheat the oven to 350F 175C

Grease a 9-inch round cake pan and line the bottom with parchment paper

In a microwave-safe bowl, melt the semi-sweet chocolate chips and unsalted butter in 30-second intervals, stirring until smooth

Let it cool slightly

In a separate bowl, whisk together granulated sugar, eggs, and vanilla extract until well combined

Gradually add the melted chocolate mixture to the egg mixture, stirring constantly

Sift in the all-purpose flour, cocoa powder, and salt

Gently fold the dry ingredients into the chocolate mixture until no streaks remain

Pour the batter into the prepared cake pan and smooth the top

Bake in the preheated oven for about 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs

Allow the torte to cool in the pan for 15 minutes, then carefully transfer it to a wire rack to cool completely

Spoon the cupcake batter into the prepared muffin tin, filling each liner about two-thirds full

Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean

Remove the cupcakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely

Once the cupcakes are completely cool, use a piping bag or a spoon to create a small well in the center of each cupcake

Fill the wells with vegan dulce de leche, using about 1-2 teaspoons per cupcake

Classic Hamslider



A classic burger with a twist, these hamsliders are perfect for a quick and delicious meal.

Ingredients:

  • 4 slider buns
  • 4 small burger patties beef or your choice
  • 4 slices of ham
  • 4 slices of Swiss cheese
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon ketchup
  • 1/2 cup shredded lettuce
  • 4 slices of tomato
  • 4 slices of red onion
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil

Instructions:

Warm up your grill or pan on the stove by setting it on medium-high heat

Some salt and pepper should be added to the burger patties

Put the burger patties on the grill or pan and cook for two to three minutes on each side for medium-rare, or longer if you like them more done

Add a slice of ham and a slice of Swiss cheese to each patty in the last minute of cooking

Put the lid on top to melt the cheese

Separate the slider buns and toast them briefly on the grill or in a toaster while the patties are cooking

Make a sauce by mixing mayonnaise, Dijon mustard, and ketchup in a small bowl

Once the slider buns are toasty, spread the sauce on them

Put a lettuce leaf, a tomato slice, a red onion slice, and the patty with cheese on top of the bottom half of each bun

Add the other half of the bun on top to finish the slider

Enjoy while hot!

Festive Stuffed Butternut Squash

Ingredients:

  • 2 medium butternut squashes
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1/2 cup dried cranberries
  • 1/2 cup chopped pecans
  • 1/2 cup chopped fresh parsley
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried sage
  • Salt and pepper, to taste

Instructions:

Preheat the oven to 400F 200C

Cut the butternut squashes in half lengthwise and scoop out the seeds

Place them on a baking sheet, cut side up, and roast for about 45 minutes, or until tender

In a medium saucepan, combine the quinoa and vegetable broth

Bring to a boil, then reduce heat and simmer for about 15 minutes, or until the quinoa is cooked and the liquid is absorbed

In a large skillet, heat the olive oil over medium heat

Add the onion and garlic, and saut until softened, about 5 minutes

Add the bell peppers, cranberries, pecans, parsley, thyme, sage, salt, and pepper to the skillet

Cook for another 5 minutes, then remove from heat

Once the butternut squashes are tender, remove them from the oven

Scoop out some of the flesh from each half to create a hollow center

In a large bowl, combine the quinoa and vegetable mixture

Spoon the mixture into the hollowed-out center of each butternut squash half

Return the stuffed squash to the oven and bake for an additional 15 minutes, or until heated through

Serve the stuffed butternut squash halves warm, garnished with additional parsley if desired

Madeleines con pepitas de chocolate



Deliciosas y esponjosas Madeleines con un toque de chocolate. Perfectas para acompañar el té o el café.

Ingredients:

  • 2 huevos
  • 100 g de azcar
  • 1 cucharadita de esencia de vainilla
  • 100 g de harina
  • 1/2 cucharadita de polvo de hornear
  • Una pizca de sal
  • 100 g de mantequilla derretida
  • 50 g de pepitas de chocolate

Instructions:

Precalienta el horno a 180C 350F y engrasa los moldes para Madeleines

En un tazn, bate los huevos con el azcar hasta obtener una mezcla espumosa

Agrega la esencia de vainilla y mezcla bien

Tamiza la harina, el polvo de hornear y la sal sobre la mezcla de huevos y azcar

Incorpora todo con movimientos suaves y envolventes

Aade la mantequilla derretida y mezcla hasta obtener una masa homognea

Incorpora las pepitas de chocolate a la masa y mezcla para distribuirlas de manera uniforme

Refrigera la masa durante al menos 30 minutos

Coloca cucharadas de masa en los moldes para Madeleines, llenndolos hasta aproximadamente 3/4 de su capacidad

Hornea las Madeleines en el horno precalentado durante 10-12 minutos o hasta que estn doradas en los bordes

Retira del horno y deja enfriar en los moldes durante unos minutos antes de transferirlas a una rejilla para enfriar completamente

Instructions:

Start by heating the oven to 400F 200C

Add the butternut squash dices to a large bowl

Add the olive oil, chili powder, cumin, salt, and pepper

Toss the squash until it is well covered

Place the butternut squash in a single layer on a baking sheet and season it

Roast for 20 to 25 minutes, or until soft and slightly caramelized

Warm up a pan over medium-low heat and add the minced garlic and chopped red onion

Cook until the onion and garlic are soft

After you add the black beans, cook for another 5 minutes while stirring every now and then

Add pepper and salt to taste

You can warm the corn tortillas up in a dry pan or the microwave for a short time

Spread some of the black bean mixture and some of the roasted butternut squash on each tortilla

This is how you make the tostadas

You can add shredded cheese to the tostadas if you want, then broil them for a minute or two until the cheese melts

Sliced avocado, sour cream, and fresh cilantro leaves should be put on top of the tostadas
