Ingredients:
- 1 1/2 cups all-purpose flour
- 1 cup sugar
- 1/2 cup unsweetened almond milk
- 1/2 cup vegetable oil
- 1/4 cup unsweetened applesauce
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup vegan dulce de leche store-bought or homemade
- Vegan whipped cream optional, for topping
- Vegan caramel sauce optional, for drizzling
- Vegan caramel candies optional, for decoration
Instructions:
Preheat your oven to 350F 175C and line a muffin tin with cupcake liners
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt
Add the almond milk, vegetable oil, applesauce, and vanilla extract to the dry ingredients
Stir until just combined, being careful not to overmix
Spoon the cupcake batter into the prepared muffin tin, filling each liner about two-thirds full
Bake in the preheated oven for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean
Remove the cupcakes from the oven and allow them to cool in the tin for a few minutes before transferring them to a wire rack to cool completely
Once the cupcakes are completely cool, use a piping bag or a spoon to create a small well in the center of each cupcake
Fill the wells with vegan dulce de leche, using about 1-2 teaspoons per cupcake
If desired, top each cupcake with vegan whipped cream, drizzle with vegan caramel sauce, and decorate with vegan caramel candies
