Ghee and Clarified Butter



Ghee, also known as clarified butter, is a staple in Indian cuisine and is gaining popularity worldwide for its rich flavor and high smoke point. It's easy to make at home and can be used in a variety of cooking methods, from sautéing to baking.

Ingredients:

  • 2 cups unsalted butter

Instructions:

Transfer the unsalted butter into a saucepan with a thick bottom

Melt the butter completely over a low to medium heat source

After it melts, give it a gentle simmer

There will be foam on top as it cooks

Using a spoon, skim off the foam and discard

Simmer until the liquid turns clear and the milk solids at the bottom of the pan turn golden brown

This could take a quarter to an hour

Take it off the heat and allow it to cool a little

To get rid of any leftover milk solids, strain the mixture into a dry, clean container using cheesecloth or a fine-mesh sieve

Throw away the solids

Before putting the clarified butter in an airtight container, let it cool completely

As it cools, it will become solid

For up to several months, store in a cool, dark place
