Crock Pot Taco Joes



Taco Joes in the crock pot are tasty and simple to make. They are great for when you have a lot to do and still want a tasty dinner. When you mix the taco seasoning with the slow-cooked beef, beans, and vegetables, you get a filling for your hamburger buns that will make your mouth water.

Ingredients:

  • 1 lb ground beef
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 can 15 oz black beans, drained and rinsed
  • 1 can 15 oz corn, drained
  • 1 can 15 oz diced tomatoes
  • 1 packet taco seasoning mix
  • 1 cup shredded cheddar cheese
  • 4 hamburger buns

Instructions:

In a skillet, cook ground beef over medium-high heat until browned and cooked through

Add chopped onion and red bell pepper to the skillet, cook for 2-3 minutes until softened

Transfer the cooked beef, onion, and pepper mixture to a crock pot

Add drained black beans, corn, diced tomatoes, and taco seasoning mix to the crock pot

Stir well

Cover and cook on low for 4-6 hours, or on high for 2-3 hours

Before serving, sprinkle shredded cheddar cheese on top of the mixture in the crock pot and let it melt

Toast hamburger buns in the oven or on a skillet until lightly browned

Scoop the Crock Pot Taco Joes mixture onto the toasted buns, and serve hot
