Ingredients:
- 6 large potatoes, peeled and diced
- 1 tablespoon olive oil
- 1 onion, diced
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 8 eggs
- 1 cup milk
- 1 cup shredded cheddar cheese
- Salt and pepper to taste
- 2 green onions, chopped for garnish
Instructions:
Preheat the oven to 375F 190C
In a large skillet, heat olive oil over medium heat
Add diced potatoes and cook until golden brown and tender, about 10 minutes
Add diced onion and bell peppers to the skillet
Cook until vegetables are soft, about 5 minutes
In a mixing bowl, whisk together eggs, milk, salt, and pepper
Grease a baking dish and spread the cooked potato mixture evenly on the bottom
