Watermelon Moscow Mule



A cool take on the traditional Moscow Mule that has the sweet taste of watermelon added to it.

Ingredients:

  • 2 oz vodka
  • 1 oz lime juice
  • 1 oz watermelon juice
  • 4 oz ginger beer
  • Watermelon slices and lime wedges for garnish

Instructions:

Put ice in a copper mug

Over the ice, pour the vodka, lime juice, and watermelon juice

Add the ginger beer on top and stir it in slowly

Put watermelon slices and lime wedges on top to look nice

Sweet Potato Tuna Melts



A tasty and healthy variation on the traditional tuna melt sandwich is the sweet potato tuna melt. The sweet potato rounds that are used as the base give this hearty dish extra sweetness and vitamins. Perfect for a quick dinner or lunch that fills you up!

Ingredients:

  • 2 medium sweet potatoes, sliced into 1/2 inch rounds
  • 1 can 5 oz tuna, drained
  • 1/4 cup mayonnaise
  • 1/4 cup diced red onion
  • 1/4 cup diced celery
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese

Instructions:

Turn on the oven and heat it up to 400F 200C

Put rounds of sweet potato on a baking sheet that has parchment paper on it

For 20 to 25 minutes, or until soft

Put the celery, red onion, mayonnaise, salt, and pepper in a bowl and mix them together

Put some of the tuna mixture on top of each sweet potato round

Add crumbled cheddar cheese on top of the tuna mix

Put it back in the oven and bake for another 5 to 7 minutes, until the cheese melts and starts to bubble

Enjoy while hot!

Winter Wonderland BBQ

Put the ribs on the grill and cook for 30 to 40 minutes, turning them over and basting them with more sauce every now and then

As soon as the ribs reach 160F on the inside, take them off the grill

After cooking the ribs, let them rest for 5 minutes

Ingredients:

  • 1 cup gluten-free oats
  • 1/2 cup almond flour
  • 1/4 cup honey
  • 1/4 cup coconut oil, melted
  • 1/4 teaspoon salt
  • 1/4 cup mini chocolate chips
  • 24 printable lunchbox joke cards

Instructions:

Warm the oven up to 175F 350C

Mix the oats, almond flour, honey, melted coconut oil, and salt together in a bowl until everything is well mixed

Add small chocolate chips and mix well

Roll the dough into little balls, and then press them into mini muffin tins to make lids

Turn the pan golden brown after 10 to 12 minutes

Take out of the oven and let cool all the way down

Put a lunchbox joke card on top of each cap after it has cooled down

Fully Loaded Baked Egg Casserole with Potatoes



This fully loaded baked egg casserole with potatoes is a hearty and satisfying dish perfect for breakfast or brunch. Packed with flavor from the potatoes, bell peppers, onions, and melted cheese, it's sure to become a family favorite.

Ingredients:

  • 6 large potatoes, peeled and diced
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 1 red bell pepper, diced

  • 8 eggs

Instructions:

Add diced onion and bell peppers to the skillet

Cook until vegetables are soft, about 5 minutes

In a mixing bowl, whisk together eggs, milk, salt, and pepper

Grease a baking dish and spread the cooked potato mixture evenly on the bottom

Pour the egg mixture over the potatoes and vegetables in the baking dish

Sprinkle shredded cheddar cheese on top

Bake in the preheated oven for 25-30 minutes, or until the eggs are set and the cheese is melted and bubbly

Garnish with chopped green onions before serving
